A slight touch is enough to turn “food”, which is meant to satisfy one’s hunger, into “cuisine”, i.e. art, enjoyment, satisfaction of all senses. And that touch comes from herbs and spices, those “invisible” ingredients that give flavor, aroma and identity.
Herbs and spices are two different worlds, yet with many common features. One of them is their health-giving value which in many cases exceeds their value in cooking, especially in the case of Mediterranean herbs. Of course, according to Hippocrates, nutrition is medicine and vice versa.
